Hello everyone, I have just joined this site and have only just started looking around. I’m apart of the Production Team of the Westcoast Chocolate Festival and am responsible for the training of our volunteers. I am putting together a workshop for training purposes and am looking for sites that would have video clips talking about the history of chocolate or showing the processes of refining it, actually anything that might be of use. Any info that you can pass my way would be greatly appreciated.

Michel Cluizel has a video available that takes you behind the scenes of chocolate production. If you contact the importer in New Jersey, they might be able to send you a copy. Domori has a DVD available, so you could possibly ask them for one as well. Just explain to them your purpose.

There’s also a pretty cool little DVD put together by the folks at Yachana in Ecuador. It’s specifically about their program and processing, which are a little out of the ordinary, but there is some good footage of cacao harvest, etc.

Jacques Torres has video loops of the chocolate production process running at his store in Manhattan. You might be able to arrange to borrow a copy. There’s contact info on his website: mrchocolate.com
