What's the best chocolate to use for making gelato? I am starting up a gelataria in the houston area and was wandering what people on this site thought they would like to have as their chocolate flavor?

El Rey's Gran Saman, hands down, is the clear winner. As you may know, cold dulls the taste buds, and flavors tend to get subdued as well. Because of Gran Saman's intensity and comparatively low level of fat, it should still possess intense flavor while cold and should integrate easier with the milk or cream.
