I have enjoyed a few bars with little bits of passionfruit inside.

I want to try making my own bar with dried passionfruit bits. Anyone know where can I order dried passionfruit bits?

Have not seen any but you can dry your own fruits
with a system that many restaurants use. i can try to find info
if you are interested

Michael has some freeze-dried passion fruit bits (they call them “crispies” )…passion fruit pulp on a dextrose carrier. These will soften in a ganache but should hold their texture in a bar.
