What’s the going rate for trainee chocolatiers? I plan to open a choc shop soon and would like some advice on what others pay in the UK.Any guidance would be appreciated. Thanks.

Why not start at minimum wage with a pre-agreed review after 6 and 12 months, by which time you will know how valuable the trainee is to you and what your cash-flow looks like compared to forecast.
