Sigh. The food budget, she is dead.
Quite frankly, even though I said Chuao (70%) would be a 'special occasion' chocolate, I wanted more.
So I picked up another bar, and a bar of 9 (75%) to compare it to. Both bars were beautiful, with the Chuao being a bit orange and the 9 being a dark rich brown.
Chuao, with its lovely bright fruity acidic taste, is still my favorite. 9 is more chocolatey (I guess this is to be expected, being a higher percentage) and less acidic. The flavor was very pleasant in a different way, but I do prefer the Chuao as it seems more interesting.
However, the melting texture of the Chuao was much creamier than the 9, which was a bit grainy. So that's where the preference for the Chuao was clear for me.
These bars have to last me till the end of the month! Sadly, I can't stop snacking on the Chuao. It's almost gone...
Myself, the person I buy my Amedei wholesale from and a couple who frequent my tasting classes all agree that the No. 9 is a better bar. It's nice to see that at lasts weeks competition, it beat out the Chuao bar.
I wonder why your No 9 was grainy, mine aren't. Maybe it was a little old and was crystallizing. It's nice to see... oh wait, this post was made back in 2007. lol - Ummmmmm /crickets
