Domori opts out of a shiny finish, instead deciding on a matte-style one. Chocolate has a nice cherry-mahogany colour, as becomes this Trinitario cocoa. Significant swirling is found on the back, indicating a quick mold. Crisp snap with little visible grain.
Aroma is immediately classic Domori, offering hints of buttermilk, cherry, and flashes of fresh-picked strawberries.
Taste opens up with strong tones of the ferment — mainly vodka, before giving some ground to a sweeter note of cherry cordial. The flavour then evolves into something more woodsy, reminding me of mushrooms and oak. Through this evolution is a background of allspice, creating a very dynamic chocolate indeed — if a little untamed.
Chocolate melts beautifully, unctuously coating the entire mouth…like yoghurt. Simply marvelous.
The length is very long, with some bitterness along with a more intriguing note of sherry vinegar.
A great chocolate that could probably use some work to bring it under control. I find myself, however, very satisfied after a couple small pieces.
