A chocolate from the island of Java(75%), combining Criollo and Trinitario beans. A bar that commands an enormous amount of concentration on my behalf to consider its various nuances of flavour, I might yet find other surprising secondary flavours in this offering from Pralus on another day...

Bar is presented immaculately in clear plastic. Java has wonderful luster and shine, with trademark dark red/mahogany colour for criollo cocoa. Upon removing the bar, my mind is thrown into somewhat of a confused state as I try to sort through the fragrances beyond a darkly roasted cocoa. The aroma seems to be several things at once: toast, cedar, honey, and a hint of avocado. Very interesting and challenging.

Bar snaps cleanly with minimal grain visible. Tiniest trace of swirling; no big deal. Flavour, like the aroma, is very challenging. Generally speaking, the initial note is light. I am tempted to say honeydew melon, but it might be cantaloupe. I am also very inclined to agree with there being a 'mushroomy' note in the beginning, but it makes a short (albeit definitive) appearance. Flavour morphs and progresses with finesse as a body of hummus, tobacco, and something tart take over. Chocolate finishes cleanly with a significant amount of acid in the back of the throat.

Length is also extremely good, with lingering notes of bitter walnuts and coffee in the mouth for a significant period of time.

This chocolate surely earns points for originality and complexity. This is not a chocolate for one who is faint of heart or looking to relax. Indeed, this chocolate is somewhat of a meal, offering the complexity of several courses of food! One word to sum up my review: SATISFYING.

Opinion: 8.5/10 24/100

Total: 9.225/10 Amazing.

lol, I don't think I am experienced enough. Tell you what though... I love writing member reviews. Just sitting down with a chocolate for 40 minutes or so (that is how long I spent with Java) and just really pondering it. This bar got me pretty excited as you might be able to infer by the rating I gave it. I am looking forward to reviewing other bars, especially ones by Pralus in the days to come. I have a bar of their Columbie and one bar of their Madagascar.

One of my main aesthetic (and practical) complaints about Pralus is the packaging. Although you complement it above, I can't tell you the number of times I've run into trouble with these bars because of light damage, improper seal...on and on. As fascinating and good as the line is, it presents some real problems for the retailer.

(Writing this half hoping someone from Pralus is reading :-)
