The Maile Kai chocolate is Dole’s Waialua Chocolate. The Big Island has many small farmers in cacao production most on 1-5 acre plots. Some sell their pods and raw chocolate at the local farmers market, some grow and produce beans for the Coopers. The fist quarter issue 2008 of Hawaiian Style Magazine had a nice article on the Wailaua Chocolate. This is part of Diversified agriculture plan developed in the late 90′s when the sugar cane mills closed.
