For those forumites near Seattle, we’ve just opened VinElla, the first full-line wine shop in Woodinville. We’re also stocking fine chocolates, including Domori’s Porcelana and Puertomar 25g bars, Amedei’s Toscano Brown (Toscano Black will be in as soon as Chocosphere has it back in stock) 100g bars, Amedei’s Monodosi Toscano Black, El Rey Caoba Bucare, and Apamate 80g bars, and Cluizet’s 100g hacienda los Ancones bars. We’ll also have Fran’s, Dilletante, Seattle Chocolates, Chocolate Company, Fiore, and Chocolati bars, coins, and pastilles. We’re working on specific wine, port, and dessert wine pairings for each chocolate. I don’t know a lot about fine chocolates but I was a chef for 25 years and have been writing about wine for ten and I plan to apply the same aesthetic criteria to chocolates and their relationship to food and wine.
