I think this is the normal way of business and not only in chocolate industry. The future will bring up new fine chocolatiers.

It's not only size versus quality it is also about being independent and making your decisions as opposed to having to answer to investors who may have a very different idea of what "fine" chocolate is...
Personally we've been approached my many investors who wanted us to "stretch the brand" and open "30 shops in 3 years" and we told them to go elsewhere. It means we grow more slowly but no one tells us what to do and we set our own standards...
