Has anyone tried the Scharffen Berger Porcelana bar? It came out last October in limited quantities, so I imagine it's a bit hard to obtain now.

I hadn't even heard of this! Sounds very intriguing, given that our current no. 1 bar is Amedei's Porcelana. I have Domori's Porcelana here ready to try - it would be interesting to put all three next to each other.

Well, after contacting Scharffen Berger about the Porcelana bar, I learned that it was indeed produced in very limited quantities, and as a result, it is not available anymore. However, I noticed that http://www.chocosphere.com was selling this bar for a very short time (roughly three days). I guess it sold out fairly quickly. Perhaps Scharffen Berger will produce this chocolate again. In response to your comment regarding the Amedei and Domori Porcelana, you should make a feature on this site comparing bars of the same percentage or type of bean. For example, do a taste test with Porcelana or Chuao bars and then post the results.

What exactly is the meaning of "Porcelana" when describing chocolate?

I live in SF and Scharffen Berger is everywhere, but I've only seen 3 different bars. It used to be my favorite until I discovered Valrhona and Michel Cluizel (I'm looking for Domori).

Porcelana is a variety of cocoa bean, or a sub-variety of Criollo cocoa beans, depending which way you look at it. It's considered to be one of the best varieties and chocolate made from it is therefore much sought after. It's hard to farm and is in decline in its native Venezuala, but there are efforts to revive it and several chocolate makers are supporting this - with excellent results.

Scharffenberger made a special edition bar with porcelana, but it was only available in small quantities for a short period - no one I know has even seen it, so don't feel too left out!

I am fortunate enough to have a great friend who sends me Scharffen Berger every year for my birthday in December. Last year was a box of Porcelana (it was only sold by the box). It truly is the most complex chocolate I have ever tasted. I am still hoarding about 6 bars - wondering what I will do when they are gone. Hmm, perhaps I should send Mr. Christy a bar to compare the three?

I'm just wondering what the $140 bottle of chocolate perfume they sell smells like.

I wondered about the perfume as well. I hope it's not chocolate scent. It wouldn't be too pleasant smelling like chocolate all day long; you'd be constantly craving the stuff!

Have sent you an email Zoe. I'll do a special Pod feature on Porcelana when I have it. Also I know of another maker experimenting with Porcelanan beans, and will include it if they produce a chocolate from them.

I stopped by the Scharffen Berger store this afternoon for lunch and caught a whiff of the chocolate perfume. Not too bad, actually.

I asked if there would be another run of the Porcelana and they said they would probably not do another Porcelana, but they might use a different bean each aniversary. And, yes, they have a stash of Porcelana somewhere, but wouldn't sell it.

Probably. But chocolate isn't wine; they can't wait too long. I wish I had known about this run last year so I could have picked some up. Anyway, work is over in 2 hours and it's my Friday ritual to pick up a new bar. Who knows what new pleasure awaits me down at Fog City News!

I can now reveal that the chocolate maker experimenting with porcelana was Pierre Marcolini, and that they will be launching a limited edition Porcelana made with Mexican beans at the Mexican Embassy in Brussels on October 14 2003. I'm hoping to pick some up during our tour of London Chocolate Week.

With the Scharffenberger from zoischa this will make four different bars for a porcelana special comparison - I can't wait!

I tasted simulateneously a sample of Marcolini's pure porcelana and another porcelana bar.
Pierre marcolini bars will be available soon in London at the store.
His are made from mexican porcelana, in fact he bought the whole production (quite a challenge when you face up with the giants).
tasting note:
amazing smoothness, long presence in mouth, starts off with very rich autumnal notes (like autumn leaves), then moves on to a very fruity sort of grape taste without any asperity, and then dissipates to a wonderful chocolate after taste.
very aromatic.

ps this bar had many more aromes and subtleties then the other porcelana (venezuelan) bar available in London.

Forum member zoischa (sounds like a member of the politburo!) has just sent us a Scharffen Berger Porcelana bar to review, and I couldn't resist whipping it out of the wrapper and tasting it straight away!

You can see the resulting review at http://www.seventypercent.com/.....asp?ID=125. Not bad at all - given the bar is a little old (it was made for Scharffen Berger's 5th anniversary in 2002), it scores well.

Let's hope they make some more!

I also ordered some of the Scarffenberger Porcelana back in 2003 and as I remember it was not 100% Porcelana but some blend with another variety, I recall it to be about 75%, or so, Porcelana. As I also recall, although I liked it, I didn't like it as much as the Amedei. I'll have to go back again and retry it, I still have a couple of bars left. Can anyone tell me how/where to get some of this Marcolini Porcelana? I've been reading alot about his chocolates and now I must sample them!!!
