Delicious, chewy and sinfully sweet.

15g unsalted butter/marg
4 medium eggs whites
350g icing sugar
75g Green & Black’s (or other) cocoa powder
2 tablespoon plain flour
1 teaspoon instant coffee powder
125g walnuts (or experiment), finely chopped

Preheat oven to 180C/350F, gas mark 4.

Lightly grease and line several baking sheets with parchment.
Whisk eggs until very frothy.
Add sugar, cocoa powder, flour and coffee, whisk again until blended.
Add 1 tablespoon water and whisk until mixture gets very thick and fold in nuts.
Place tablespoonfuls of the mix on the tray’s and allow lots of room between.
Bake for 12 to 15 minutes. Leave to cool for a few seconds and lift off to a wire rack to cool.
