Hi people.I’m very new here.Just want to ask you how do you fold in chocolate chunks into meringue?I want to make double chocolate pavlova.So, after folding in cocoa powder to the meringue, I don’t know how to fold in chocolate chunks/chips into it without having it falaten since meringue is very very sensitive towards fat.Any tips?Thanks.

Never done it myself, but try dust them in corn flour or corn starch before gently folding in..

How are you folding in the chocolate? Are you ‘sacrificing’ part of the meringue by mixing it with the chocolate and then folding it into the rest? The meringue shouldn’t be flatten because the chocolate itself.
