OfflineHere is one that I have made a few times, including for a holdiay candy class last year that I found in a book and then have tweeked a bit:
Peppermint Chocolate Sticks
1/2 cup sugar
1 T white corn syrup
2/3 cup water
1/2 t peppermint extract or a couple of drops peppermint oil
7 oz dark chocolate
1/4 cup toasted coconut
Lightly oil a cookie sheet or use a Silpat. Place the sugar, syrup, and water in a small sauce pan. Heat slowly until the sugar is dissolved. Bring to a boil and boil rapidly until the mixture reaches 280°F. Remove from heat and stir in the peppermint extract or oil. Please be careful, this is really hot and will spit and bubble. Pour onto the sheet to cool.
Break up the sugar candy into a bowl and use the end of a wooden spoon or rolling pin to crush the candy.
Melt the chocolate slowly over a pan of simmering water or in a microwave. Try not to let the melted chocolate go over 90°F. Once the melting has started, you can stir the chocolate until it is completely melted.
Mix the candy and coconut into the chocolate then spread onto parchment paper. Cool then cut into thin 2 1/2 inch long strips.
