I’ve never had a truffle before, but I made some today. The only reason that I made them was because I bought a bar that was far too sweet, so I mixed it with a really strong chocolate to make it more palletable for me. I added a little more cream than chocolate, maybe 1.5:1 – cream:chocolate. Then added a spice mixture that I add to pretty much everything, which is two parts cinnamon, two parts nutmeg, two parts cardamom, one part ginger, one part mace, and one part (yes) black pepper. Then I dusted the balls with cocoa powder.
They turned out really good. They start out firm, then turn to an almost pudding consistancy in the mouth. They’re very dark, creamy, and… rich. Too rich. They’ll ruin chocolate for me if I go too crazy eating them, then again, they’re addicting. I’ll stick with plain chocolate bars for the most part.
