Hello, brand new, very green, complete novice but eager to learn, usually the hard way. I would like to make chocolates with a piped top (to create a chocolate that resembles a cupcake) but can't seem to get the mix right. I assume it's a mix of chocolate with a bit of cream but the mix either splits or seizes. Please can someone help, I know it's probably simple but so am I!
