Hello,

If chocolate has been tempered then allowed to harden, does it need to be retempered when it is melted again? I’ve seen two opposing opinions on this subject on the internet and I’m wondering which is true.

If it’s properly tempered and allowed to harden, you can remelt it carefully w/o destroying the temper. In order to do this, you’ve got to have sufficient control on your temperature – if you exceed, say, 92F during the remelting process, you’re very likely to need to retemper it.
