Of course I can say something about my experience with the Canoabo.
My absolute favourite from that box was the 100%. Nearly everyone says that Domori’s 100%’s are the best ones available. 100%’s are always bitter, that’s normal. But this one was unbelievable smooth and aromatic. Normally sugar enhances the aromas of cacao (at least I believe so…). So I have never tasted a 100% which had as brilliant aromas as a 70% bar from the same cacao. But this one had the strongest aromas from all 4 different bars. It was so strong and nice (with really no astringency) that I sometimes wondered whether they mixed up the 100% with the 80% (which was not half as aromatic).
Before the Canoabo box I tasted the Ocumare 61 box. My favourite bar in that one was the 60%, so I hoped the Canoabo version would be as good as this one. But I’m not that enthusiastic about it. The same holds for the 70% bar.
Canoabo is really a good cacao, but I was not that impressed as I am from the Ocumare or even the Porcelana. I’m really glad that I had the chance to taste it but I can say that I will not buy another box in the near future.
Nevertheless remind what is obviously true for all Domori products: The next lot may be totally different and the 60% may be ambrosia and the 100% quite bitter.
It’s very difficult for me to describe the aroma notes of the Canoabo cacao. I would say: Some red fruits and bit of tobacco. But don’t be too sure about that characterisation. I’m not very good in describing cacao flavours and it’s quite a long time since I tasted it for the last time.
