Hi,

I am buying small amounts of chocolate supplies at the moment from HB ingredients (UK). I have just read Sara Jayne-Stanes book Chocolate the definitive guide and she mentions that Ritter Courivaud in Wembly sell a range of food products for chocolate makers. The web site she gives does not exist.

Has anyone used them or can anyone comment on how they compare with HB ingredients for range of chocolate making ingredients and minimum supply levels?

I am very happy with what I am currently buying but would like to know what else is available in the UK!

HB Ingredients carry a small range of organic chocolate from Barry Callebaut and Belcolade but a 10kilo pack seems to be the smallest they offer. They charge for delivery on small orders. I have found them very helpful tel. no. is 0845 8800 799. email:sales@hbingredients.co.uk.

I also have a price list from Norwood House Chocolate Ltd who list some organic Valrhona couverture in 1kg or 3 kg blocks. Tel 0845 230 8868 email: sales@chocolate.co.uk.

I have not tried any organic chocolate from these suppliers and the only organic chocolate I have tried and really liked came from Montezumas – it was their very dark milk chocolate but that is one they do not sell in kilo bars as far as I can tell web:[url]http://www.montezumas.co.uk[/url]. They have a shop in Brighton so I guess you know about them anyway.

I believe Montezuma use Becolade couverture and their dark milk is a blend of the 73% dark and the milk. You could create the same blend yourself by getting the becolade in bulk. I know vantage house have it but I think they only have becolade in 20 kg sacks. I may be wrong.

Many thanks for the information on using Belcolade, I too can only find 20kilo packs of the Belcolade organic chocolate. I may try mixing a non-organic Belcolade as a first try which I can get in much smaller quantities.

I had wondered about mixing my own blend but thought the proportion of milk solids to cocoa might drop too much. I will have to get my calculator out and see what I can work out.

I’ve thought about that too. The best solution I came up with was to add 100% cocoa solids chocolate to the milk chocolate. This way you wouldn’t need as much to bring the cocoa content of the milk chocolate up and therefore would be left with a higher ratio of milk solids in the blend. However, I’m not sure how good the 100% chocolates made by big couverture manufacturers are as I have never tried any.

I have tried the Montezuma dark milk and although it isn’t that milky the milkiness is still really noticable and it does have that softer consistency in the melt that milk chocolates generally have. To be honest I prefer a dark milk chocolate not to be too milky as I feel it washes out the chocolate flavours a bit too much.
