I am currently searching for an affordable dark in the 65% range. I was hoping to stay below $10.lb (US). I am looking for something with a long finish, no bitterness, and balenced acidity, please post your recomendations.

In the quite affordable range, I would recommend the E. Guittard 65% origin bars: Sur del Lago (Venezuela), Ambanja (Madagascar), and Chucuri (Colombia).
All three are available in couverture and retail form. If it’s length of finish you’re really after, I’d probably begin by trying the Chucuri, but all three are worth sampling.

Great suggestion. I have heard a lot about guittard, and haven’t yet had the opportunity to sample the whole line. I am hopefully going to try them at the philly candy show. I am also considering blending different chocolates to get the desired effect.

All of Guittard’s varietals have been reviewed here, so give them a read to see what they’re like. Also, I recommend Santander’s 65%, in addition to several of Cluizel’s 1er Cru de Plantation bars since most of them come close to the 65% cocoa content you’re looking for. Also check out Chocolove’s Rich Dark 65% and especially Valrhona’s Vintage bars, which are actually 64%; and although not part of that series, Caraibe is good at 66%, and Manjari is another choice at 64%

I’d second the Chocolove and Santander options–both quality products in the price range you’re looking for. The Valrhona origins are very tasty as well (particularly fond of the current Palmira), but might blow the budget. (And that’s probably an understatement :-)

Great,
I found Santander in bulk on Chocosphere. Does Chocolove only feature small bars or do they also have Couverture?

Yes, they have couverture. Just look through the site and it’s there under each respective company. The only ones not available in couverture format are Valrhona’s Vintage bars.
