Anyone any experience of colouring white chocolate? I want to make different colours to make some eye catching displays but I am not sure where to start. I think I read that coloured cocoa butters are the way to go but any advice or info would be gratefully received. Also wondering if its best to colour chocolate while in the temperer and in this case is there any risk of colouring the bowl (which I dont think is a good idea)

Powdered, fat soluble colours are the way to go. The coloured cocoa butters can be used to add colour to moulds before pouring in chocolate, or for spraying onto finished items, but they’re not suitable for colouring a large mass as they aren’t concentrated enough and you’d have to add loads to get a good colour, which would alter the viscosity of your chocolate.
If your temperer is stainless steel, it won’t stain, but make sure you clean it thoroughly afterwards.Depends how much you need really. I’d just mix the required amount of tempered chocolate in a bowl with the colour, then you don’t need to start all over for the next colour.
Don’t try to use liquids…disaster in the making!

Girls…when it comes to colours…just be aware of the Southampton report. Next year some colours will have to be labeled with a warning.
If you want to go natural…www.overseal.com can help you out. They come in liquid form but I’ve been quite successful. 1 kg min. order though.
With powders…mix with chocolate the day before use. When it comes to re-melting all the bits should have been mixed in.
