many problems with Merckens Dark chocolate

I hope somebody can help. I have been making chocolate barks with no problems for months and then all of a sudden I am getting some white streaks on the surface and the chocolate is not hardening the same. I use a melter and temper in the melter (adding more buttons). Then once it is at the right temp I pour on a tray and put in the fridge. I have been doing this process all along and it was working great. I thought it could be the fridge temp or I got a different batch of chocolate then normal? I don't know, any ideas? Thanks!

White streaks and lack of "hardening" in the chocolate sounds like it is out of temper. Are you testing the temper before using the chocolate? Eg., putting a bit on a plastic scraper and seeing if it sets in the proper time - 5 mins for dark, 7 for milk and 8 for white - without leaving any blemishes.

If its in temper before it goes into the fridge then maybe the fridge cooling is causing problems? Maybe you could test cooling it at room temp or less time in the fridge to avoid condensation?

Also, I haven't made Chocolate Bark before but, I seem to remember it has nuts and things in it. Are any of these at raised temperatures that could be bringing your chocolate out of temper?
