Javablond is a criollo-type cacao from East Java. Many centuries ago, a light-colored criollo cacao with a good acidity, and that was easily separated from its shell, was cultivated on the island of Java. Then a volcanic eruption devastated the plantations and forastero-type cacao was planted alongside what remained of the criollo cacao. From this mix a trinitario-type cacao was born.
One third of the island’s crop has 50% light-colored beans and therefore is classified as criollo. This cacao is unique because of its notes of tobacco, berries, smokiness and earthiness. It is spicy with an excellent smoothness, long finish and marked sweetness.

At last Pralus has competition in the Java origin and Domori puts up a fine challenge and a satisfying alternative. It still delivers on the custardy and strawberry features of the origin while introducing interesting new characteristics that are reminiscent of another relatively nearby source: Papua New Guinea. Domori proves yet again that in the Chateau line they try harder and produce the ultimate in refined, sophisticated chocolate.

Although of course the packaging is frustrating, the chocolate itself is a delight to behold. Domori is not exaggerating with the moniker ….””blond”” – this is an amazingly light chocolate in colour indeed, and here the spectacular glossy finish adds to the appeal. Some minor bubbling is there and that is about it.

The aroma is enticing, initially reminiscent of Madagascar with a citrus and teak cast, then shifting to something resembling Papua New Guinea: smoky and leathery. It almost matches the geographic position of Java – somewhere between New Guinea and Madagascar but rather closer to the former. The flavour, meanwhile, is a study in softness and delicacy, starting out with a strawberry/peach that romances you like a serenade. Then a soothing custardy body takes over, before the bar slowly slides like a setting sun into darker leathery and woody traces, retaining its poise but fading gradually away.

In a surprising twist, texture is perhaps not on a par with Domori’s ultimate – not that it’s bad, by a long shot, but it’s not at that effortless smoothness that maybe one feels would be the ideal complement to the bar. Still, however, such doubts are trivial in comparison to the seductive flavour that almost seems to capture the mood of a perfect honeymoon day. If chocolate is an aphrodisiac – well then this is a bar to share!
